Valentine's Day is just around the corner, and while the conventional box of chocolates is chock-full of corn derivatives, we found three delicious corn-free (AND gluten-free) recipes for you to make this year. These simple and wholesome treats are super easy to make the day before, so you can spend quality time with your sweetheart on the day of.
Homemade Heart-Shaped Reese's
Ingredients:
- 2 cups dark chocolate chips or chopped chocolate
- 1 tablespoon coconut oil (optional but helps the chocolate harden)
- 1 cup peanut butter
Instructions:
1. Melt chocolate and coconut oil over the stovetop, stirring continuously. Once fully combined, drizzle into this adorable chocolate mold to create an even base layer.
2. Chill in the freezer for 15 minutes to harden.
3. If your peanut butter is very thick, melt it over the stove top and and add on top of chocolate layer.
4. Chill again for 15 minutes, then add final layer of chocolate and sprinkle with flaky salt to finish. Chill until fully firm and enjoy!

This recipe is a go-to for any occasion, and to make them corn-free, just swap out all-purpose flour for einkorn flour!
Chocolate PB&J Kettle Corn Bars
Ingredients for the base:
- 2 cups Cob's kettle corn
- 1 mashed banana
- 3 tablespoons peanut butter
- 2 tablespoons avocado oil or melted coconut oil
Ingredients for the jam:
- 1 1/2 cups of frozen berries
- 2 tablespoons chia seeds
Ingredients for the chocolate topping:
- 1 cup dark chocolate (chopped or chips)
- 1 tablespoon melted coconut oil
Instructions:
1. Mix all base ingredients together and set aside.
2. Heat the frozen fruit until slightly softened, then add the chia seeds. Mash with a fork and cook until desired thickness is reached.
3. Melt chocolate with the coconut oil in a separate pan, stirring continuously until just combined.
4. Line a baking tray with parchment paper and add the base mixture to the bottom. Flatten to create an even layer. Next, add the jam in an even layer. Finally, drizzle the melted chocolate over top. Optinally, sprinkle some flaky salt over top. Place in refrigerator for an hour minutes to firm up, then cut into squares and enjoy!
